Thai Basil Shrimp, Tomato, and Egg Fried Rice

This is a quick and easy one-pot meal featuring lots of Thai basil, shrimp, egg fried rice, and tomato scrambled eggs—a new twist on classic fried rice. If you don’t like frozen mixed vegetables, don’t worry! Just chop your own carrot, use canned corn, and add fresh green peas for a flavor that’s different from the typical frozen mix you find in Taiwan.

Prepare the cooked white rice. If you have leftover rice, use that; if not, cook fresh rice with slightly less water than usual. Beat the eggs with a little salt. Finely chop the onion and mince the garlic, then sauté them in olive oil in a large pan until fragrant.

Dice the carrot into small pieces. If your carrot is small, use the whole thing. Add it to the pan and cook with the onion until the vegetables are fragrant and the onion is translucent. Push the vegetables to one side of the pan, pour in the beaten eggs, and scramble them. Dice the tomatoes (if using large beefsteak tomatoes, two are enough). Add the tomatoes to the pan and cook, then stir in the ketchup and soy sauce.

Add the shrimp, rice, corn, and green peas. Stir-fry over high heat until the shrimp are cooked through. Finally, add a large handful of Thai basil leaves and toss everything together with the residual heat.
