Juicy chunks of melt in your mouth pork swimming in spicy chilies, garlic, Mexican seasonings, potatoes, onions and more! She may take some effort but if my newest 7 year old students can make it, so can you! Excelent taste, presentation and photographs kiddos!

This recipe makes for great taquitos, tacos and burritos as well!

Ingredients

  1. ● For The First Phase
  2. 3 PoundFresh Pork Shoulder Roast
  3. 3 (32 oz)Boxes Beef Or Chicken Broth [reserve 1]
  4. 16 ozHatch Green Chilies [four 4 oz cans]
  5. 1Mexican Beer [i used dos equis]
  6. 1 (10 oz)Can Rotell
  7. 1.5 tbspGround Cumin
  8. ● For The Second Phase
  9. 1 PoundBucket Hatch Green Chilie
  10. 1LG White Onion [1/2" chop]
  11. 2LG Potatoes 1/2" chop]
  12. 1LG Jalapeño [1/4" chop]
  13. 1/2 CupFresh Cilantro
  14. 1.5 tbspMinced Garlic
  15. 1/2 tspMexican Oregano
  16. 1 tbspLime Juice
  17. 1LG Bay Leaf
  18. 1/2 tbspEsposito Herbs
  19. 1/2 tbspGreen Chili Powder [optional - order online]
  20. ● For The Sides
  21. as neededFlour Tortillas
  22. as neededCorn Tortillas
  23. as neededTortilla Chips
  24. as neededLime Wedges
  25. as neededFresh Cilantro
  26. as neededTortilla Chips
  27. as neededMexican Beer
  28. as neededMexican 3 Cheese

Cooking Instructions

  1. 1

    Place everything in the Phase One section in a large thick bottom pot.

    Simmer on medium covered for 3 hours.

  3. 3

    Roast pictured after 3 hours of simmering. Pull roast from broth and set to the side. Trim any fat. By this time your broth should be a fraction of what it was.

    1/2" chop all vegetables in the Phase Two section and add to a covered pot. Simmer for 15 minutes. Add additional water if needed to simmer veggies but only what you'll need. This should be a thick stew at its finish.

    1 Pound bucket Bueno Hatch Green Chilie pictured.

    Chop your roast into 1"+ cubes and add to pot at 15 minutes in. Stir regularly.

    Simmer pot 15 additional minutes covered. Stir regularly.

    Uncover pot and simmer until most all fluids have dissipated. Stir regularly.

    Since seasonings can lose flavor with long simmer times - taste test at the finish and add what you'd like. I'll always add additional Cumin, Green Chili Powder and garlic. Lastly, add fresh Cilantro and mix.

    Serve with an ice cold Mexican beer. Enjoy!
