The best thing is to soak them overnight whenever one plans to cook them as they become easy to digest. The Phytic acid present in them gets reduced when they are soaked and hence aids in quick digestion.
Little millet is rich in Magnesium and hence improves Heart health. It has a low glycemic index as well as rich in dietary Fiber therefore it's absolutely recommended for people with Diabetes. Not only that, it has Niacin compound which helps in the reduction of Cholesterol in the body.

The first thing to carry out is to dry roast the millet. Do it on a low heat. As soon as it turns aromatic, take it off the heat. Roast for about 4-5 minutes. That would be enough. Let it cool down and then soak in clean drinking water for a good 4-5 hours or better still overnight.

Bring milk to a rolling boil on a high heat at first. As soon as it starts boiling vigorously, lower the heat. Add either cardamom powder or whole one's to it. It's absolutely one's own choice. Add the soaked and drained millet too. Mix and keep simmering on a low for the next 20 minutes.

After about 25-30 minutes, add sugar or jaggery powder. Mix well. Cook until 5-6 minutes more. Fry chopped almonds and other nuts in a tablespoon of ghee and add it to the kheer.

Serve it hot or cold garnished with some more of chopped almonds. Enjoy!
