Cream of broccoli soup

In a large sauce pan, bring to a boil 7 cups water, cook broccoli until soft. Save some broccoli for garnish. With a hand-held blender puree the broccoli in the liquid. Set aside.

In a large soup pot, heat up the oil at moderate temperature, fry the garlic, onions, and celery for a couple minutes.

Add and melt the butter. Add the flour and cook stirring it for a couple minutes, until starting to brown.

Incorporate the milk and puree it with the hand-held blender.

Add the broccoli puree and liquid, thyme leaves, oregano leaves, chopped parsley, salt and pepper. Use the hand-held blender and puree until soup is very smooth. Bring it to a boil. Stir it occasionally. Do not let it stick and burn at the bottom. Let it cook at moderate heat for about 15 minutes.

CROUTONS
In a bowl mix the diced bread with the olive oil, minced garlic, thyme leaves, oregano leaves and parsley. Place it in baking tray and bake it in the oven o toaster until golden brown. - 7
Serve the soup, garnish it with broccoli and croutons.
