Soak 30 minutes in cold water. Cut off stem close to leaves. Remove outside leaves,cut off 1 inch from top. Tie with string to hold shape. Wash,drain,cook in boiling salted water, one half to one hour,depending on size. Drain upside down, cut string,remove choke serve hot with hollandaise sauce.

So, I learned how to make preserved artichokes from a friend.The artichokes I used are the small type that are called "carciofini" in Italy. They weigh about 80 g per piece before they're peeled. In my big extended family, artichokes are everyone's absolute favorite. Was in my early 20s, living in Arizona, when my aunt introduced me to them, and I was immediately hooked. Even planted my own, which produced loads of artichokes. When I moved back to Indiana mid-1970s, my 3-year-old had a fit on Thanksgiving because all she wanted for dinner was artichokes; and she couldn't understand "out of season" or the fact that artichokes weren't even sold in Indiana back then.
