Mix the sugar with the ground almonds first.

Add the eggs one at a time, mixing after each addition.

Once you have a smooth, even batter, add the lemon zest and cinnamon.

Grease a round cake pan with oil or butter and dust it with a little flour to prevent sticking. Alternatively, line the pan with parchment paper.

Pour the batter into the pan and bake for about 30 minutes at 350°F (180°C). When done, remove from the oven and let cool.

To check if it's done, insert a knife into the center; if it comes out clean, the cake is ready!

Place the Cross of Santiago template on top of the cake and dust with powdered sugar. If you don't have powdered sugar, you can make it by blending 1/2 cup sugar (100 grams) with 1 tablespoon cornstarch in a blender until fine.
