Steps

Peel the Eggplant and slice into small cylindrical shapes

Soak the eggplants in cold water for 5 minutes

Heat up wok or pot with cooking oil for deep frying. Make sure to season the surface.

Create Batter and Sauce

Rinse the eggplants, dip in the batter and deep fry until golden brown

Cook the sauce in low heat, until bubbling and add the Eggolants after, toss well.
