First, soak the dates and figs in water in a bowl. Heat 1 teaspoon ghee in a pan over medium heat, add the chopped dried fruits, and roast until fragrant. Remove the roasted dried fruits and set aside on a plate.

In the same pan, add a little more ghee and lightly roast the vermicelli noodles until golden. Remove and set aside in a bowl. Pour the milk into the same pan and heat until it comes to a boil. Add the sugar and stir to dissolve.

Add the roasted dried fruits and cardamom powder to the milk, then mix in the roasted vermicelli noodles. Add the soaked dates and figs, and stir to combine.

Cook until the vermicelli noodles are soft, then turn off the heat. Sheer Khurma is ready. Let it cool in the refrigerator.

Serve the chilled Sheer Khurma in serving bowls, garnished with more dried fruits and rose petals if desired.

Note: Adding figs to Sheer Khurma gives it a wonderful color and taste, so be sure to include them. You can enjoy Sheer Khurma either warm or chilled—both ways are delicious.
