Roasted rack of lamb

Season the racks of lamb with salt and pepper.
Heat up a large frying with some olive oil. Sear and brown side of the lamb. Let it cool off. - 2
In a bowl mix the pommery mustard, minced garlic cloves, 1 tablespoon fresh oregano leaves, 1 tablespoon fresh rosemary leaves and add 1 ½ tablespoons olive oil.

Coat the rack of lamb sides with the pommery mustard mix.

Mix the bread crumbs with the rest of the herbs and coat the rack of lamb.

Preheat the oven at 400°F.
Cover the bones with aluminum foil to prevent charring. - 6
Roast it for about 25 to 30 minutes.

Let it rest a few minutes before carving the rack of lamb.
You may serve it with mint jelly if you wish.
