California Farm Rotisserie French Fries

My handy little airfryer came with a rotisserie cage, never had one before, it rotates two portions of tall 7” french fries till they are all perfectly airfried on all sides in 40 minutes, no fat or oil frying needed.
When we were little, and helped our parents harvest the potatoes by hand, we were allowed to make a fire from the dried potato plant tops in the field and lay fresh potatoes in the ashes to roast and eat with our fingers. A delicacy!
This rotisserie cage gives french fries that same roasted flavor, I dont peel the potatoes when I handmake french fries and can assure you they have the same special taste.

Ingredients

5 plus 20 minutes
2 people, 2 portions
  • 2large unpeeled Russet or Yukon potatoes sliced lengthwise in 1/4”slices, then 1/4” fries
  • 2 cupsboiling water to rinse starch out of fresh cut fries before drying
  • Optional: a thin spray of olive oil for baking the french fries with more color
  • PinchMaldon flaked sea salt after baking
  • Equipment: air fryer with rotisserie, collander, electric water kettle, optional mandolin slicer, towel

Steps

  1. 1

    Cut half a pound of washed unpeeled potatoes lengthwise in 1/4” slices, then 1/4” fries, or use a hand slicer. Rinse with 2 cups boiling water in collander to wash the starch out of the fries. Dry on kitchen towel, Put in rotisserie cage in the airfryer, 40 minutes at 450F degrees. I have to press the preset symbol for “roasted whole chicken” to make my rotisserie turn. Dont ask me why.

    If you want to make thicker french fries, slice 1/2” thick, cook 60 minutes with flaked seasalt when golden, enjoy. If you want darker fries, spray with olive oil, ten minutes before finishing.
