In a bowl, mix the grapes, half of the cherry tomatoes, onion, lemon juice and zest, honey, salt, and pepper.

In a large skillet, gently cook the chickpeas with the remaining cherry tomatoes, olive oil, and garlic over low heat until the tomatoes are soft and jammy, about 15–20 minutes.

Transfer the chickpeas and the grape mixture to a baking dish and roast in a preheated oven at 400°F (200°C) for 10 minutes.

After removing from the oven, add the olives and serve with chopped pistachios and a little extra lemon juice.
