Wash proso millet and add water to it and let it soak for 5 mins.

Add cow ghee to a thick bottomed pan. When it heats up, add cumin seeds. Then add potatoes and fry till golden brown color add chopped green chillies. Cover the lid and cook the potatoes. Then remove water from proso millet.

Then add proso millet to it and sauté it for few minutes. Then add water as required. Add roasted peanut powder and mix. Add salt to taste. When it starts boiling, reduce the heat and cook. Keep its consistancy as per your choice. Healthy Proso millet rice is ready to serve.

Serve hot. Add cow ghee on it.
