I've been making this family favorite for ages.

Soaking eggplant in water does get rid of its bitterness, but it also makes it less likely to soak up a lot of oil, so you can cut calories.
If you have gochujang, try it instead of the miso + doubanjiang. This recipe is really easy and delicious. For 2 servings. Recipe by Chiton

Ingredients

2 servings
  1. 200 gramsThinly siced pork, coarsely chopped
  2. 2Eggplant (slim Japanese type)
  3. 1 tbspof each ● Soy sauce, sugar, sake
  4. 1 tbsp● Red miso (or awase)
  5. 1 tspDoubanjiang
  6. 1 tbsp●Gochujang (instead of the red miso and doubanjiang)
  7. 1 tsp● Chicken stock granules
  8. 2 tbspWater
  9. 1 tbspSesame oil

Cooking Instructions

    Cut up the eggplants and soak in a bowl of water. Mix the ● ingredients together.

  2. 2

    Stir fry the drained eggplant. When it has browned on both sides, take it out of the pan.

  3. 3

    Stir fry the pork in the same frying pan. When the color of the meat changes, add the eggplant.

  4. 4

    Add the combined ● ingredients all at once, and mix well.

  5. 5

    Turn off the heat, drizzle in the sesame oil, mix and it's done.
