Marinate the fish steaks with a little salt. Heat oil in a frypan, shallow fry the fish keep aside on a kitchen towel.

Into the same oil, throw in the bay leaves, crushed cardamom,red chilli, green chilli and cardamom. Allow the spices to release their aroma. Add the onion paste, ginger garlic paste, cumin seeds powder and red chilli powder cook over a medium flame for 5minutes. Turn the heat to low,gently place the fried fish in the pan, pour the plain milk while continuously stirring (you don't want the milk to curdle)and allow the curry to sim for 5minutes.

Now add the reduce milk sprinkle in the salt,cook for a farther 5minutes. Adjust seasonings, finish with adollop of ghee and a hearty sprinkle of garam masala powder. Thakurbarir special dudh rui fish curry is ready.Serve hot.
