🥞 Eggless Banana Pancakes 🥞

Fluffy, moist and delicious eggless pancakes!
Don’t ever toss away overripe bananas. They are perfect to make these delicious banana pancakes. As the bananas ripen, they releases sugar making them sweeter. For this reason, this recipe does not call for any added sugar, making it a nutritious and conscious breakfast option.
You can make this recipe fully vegan by substituting the milk for any plant based milk of your choice and using vegetable oil instead of butter when cooking.

Assemble all ingredients.

Sieve flour, baking powder and salt in one bowl. In a separate bowl, smash banana and add milk, water and vanilla extract.

Add wet ingredients to dry ingredients and mix until well combined but do not over mix. Let pancake mixture rest for 5 minutes.

In the meantime, warm up a nonstick pan over medium-low heat. Add 1 tsp of vegetable oil or butter. Use a paper towel to evenly grease pan and remove any access oil/butter.

Pour 1/4 cup of the mixture into the hot non stick pan. Once bubbles start to form, flip pancakes and cook for another 1-2 minutes. Repeat until mixture has finished.

Top with 1 tbsp of butter, sliced bananas and a generous drizzle of maple syrup, honey or your desired syrup.
