Firstly, assemble all the ingredients required to make “Paneer Toofani“. Grate half cup paneer and set it aside. Immerse the remaining paneer cubes in hot water for 10 minutes.

Heat oil in a kadai. Add cumin seeds, black and green cardamom, cinnamon, cloves, bayleaf and black peppercorns. Saute for 30 seconds. Add the finely chopped onions and saute until the onions turn light golden.

Add the chopped garlic, green chillies and ginger juliennes and saute till the raw smell leaves.

Add the tomato paste and the kashmiri red chilli paste and mix it well.

Saute for 4-5 minutes, until oil appears at the surface. Add the salt, coriander powder, cumin powder, turmeric powder, kashmiri red chilli powder and garam masala powder and mix it well.

Add the cashew paste and mix it well. Saute for 2-3 minutes, until oil appears at the surface.

Add a cup of water and mix it well. Cover and cook for 7-8 minutes, until oil appears at the surface.

Add the kasuri methi and the green bell pepper cubes and mix it well.

Cover and cook for 4-5 minutes, until oil appears at the surface. Now add the grated paneer and the paneer cubes.

Mix it well and cook on low flame for 3-4 minutes, until oil appears at the surface. Garnish with the chopped coriander leaves.

Paneer Toofani is ready. Mix it well and serve it immediately with roti, paratha or hot steamed rice.
