Simple sausage and rice

I had a can of condensed cheddar cheese soup in the back of my pantry and no clue what to do with it because it is a soup I don’t usually have on hand. I had a couple other staple items that I DO typically keep on hand and threw some things together. Turned out great!

I had a can of condensed cheddar cheese soup in the back of my pantry and no clue what to do with it because it is a soup I don’t usually have on hand. I had a couple other staple items that I DO typically keep on hand and threw some things together. Turned out great!
Cooking Instructions

Cook rice according to package directions using chicken stock in place of water.

Preheat oven to 350 degrees.

While rice cooks slice your kielbasa into coins and brown them in a skillet then set aside.

Combine your cheddar soup, can of rotel, 1/2 can of heavy cream or half and half in a bowl combining thoroughly.

When rice is finished combine all ingredients together and top with shredded cheese.

Bake in 350 degree oven for 5-10 minutes until cheese is melted.

This dish, which kind of falls somewhere between paella and jambalaya, was a happy accident. It came about a few nights ago, when I repurposed some leftover tomato pilaf (I've been all about pilaf lately). The rice was fluffy, soft but my mushy, super-flavourful, and even formed a bit of oh-so-irresistible socarrat (the crusty, crunchy bottom of a paella that everyone fights over). I decided to repeat the dish, but with a few extra ingredients. Once again, it turned out fantastic. The only niggle was that the socarrat wasn't quite as prominent (as you can see in the picture). Dinner was running late and I had to get food on the table... what's a cook to do? Nobody seemed to mind, anyway. They were too busy devouring delicious rice. Robert Gonzal -
