I had a can of condensed cheddar cheese soup in the back of my pantry and no clue what to do with it because it is a soup I don’t usually have on hand. I had a couple other staple items that I DO typically keep on hand and threw some things together. Turned out great!

I had a can of condensed cheddar cheese soup in the back of my pantry and no clue what to do with it because it is a soup I don’t usually have on hand. I had a couple other staple items that I DO typically keep on hand and threw some things together. Turned out great!

Ingredients

30 minutes
6 servings
  1. 1 cupplain white rice (uncooked)
  2. 1 packagekielbasa
  3. 1 cancondensed cheddar cheese soup
  4. 1 canrotel or diced tomatoes with chiles (with 1/2 of the water drained)
  5. 1/4 cupcheddar cheese shredded
  6. 2 cupschicken stock
  7. 1/2 canheavy cream or half and half

Cooking Instructions

30 minutes

    Cook rice according to package directions using chicken stock in place of water.

    Preheat oven to 350 degrees.

    While rice cooks slice your kielbasa into coins and brown them in a skillet then set aside.

    Combine your cheddar soup, can of rotel, 1/2 can of heavy cream or half and half in a bowl combining thoroughly.

    When rice is finished combine all ingredients together and top with shredded cheese.

    Bake in 350 degree oven for 5-10 minutes until cheese is melted.
