Hamburger soup

Hamburger Soup is a quick and easy meal loaded with vegetables, lean beef, diced tomatoes and potatoes. It’s great made ahead of time, budget friendly, reheats well and freezes perfectly.
This simple classic comfort food is not only delicious; it is hearty, healthy and satisfying. And easy to make with ingredients you likely have on hand.
Start with a mixture of onion, garlic and ground beef browned. Adding a mixture of frozen vegetables makes this super easy. I used potatoes but you can use any kind of pasta. Add the tomatoes, sauce and beef broth. Beef broth is the best broth option to add lots of great flavor. Add the spices along with salt and pepper. Bring to boil and cook till potatoes are tender.
Serve with corn bread or as we like it, with boiled rice.
If you’re lucky enough to have leftovers, this soup freezes well for up to 3 months.

Heat olive oil and add onions. Cook till translucent.

Add garlic and cook 1 minute.

Add ground beef and cook till colour changes.

Add potatoes and vegetables, diced tomatoes and tomato sauce.

Add pepper powder, salt, chilli powder, Italian seasoning and broth. Mix, cover and simmer 20 minutes or till potatoes are tender.

Add cilantro, mix and serve.
