I'm TRYING to type up the recipe to share with you, but I can't stop eating this long enough to finish!!! This stuff is soooooooo good! The coating flavor is very similar to my caramel corn. Family and friends, if you ever wanna give me a gift, make me this! Yummy! You can change up the munchies mix ingredients; just make sure the measurements total the same so the toffee coats everything. Our mix included Bugles Corn Snacks and sesame sticks.

Ingredients

  1. MUNCHIES MIX:
  2. 12.8 oz.Box of Chex Cereal
  3. 3 cupsnuts (any combo; your favorites)
  4. 3 cupspretzels, thins or mini
  5. TOFFEE TOPPING:
  6. 1 cupbutter
  7. 2 cupsdark brown sugar
  8. 3/4 cuplight corn syrup
  9. 1 tsp.Salt
  10. 2 tsp.Vanilla extract
  11. 1 tsp.Baking soda

    Place oven racks in center of oven. Preheat to 250°F. Prep baking sheets by spraying with vegetable oil. In a very large mixing bowl that holds at least 32 cups (Tupperware Thatsa Bowl® is perfect), combine all the munchies.

    Melt the butter in a LARGE saucepan. Add the brown sugar, corn syrup, and salt. Bring to a boil, stirring frequently, and cook for 2 minutes. Remove from heat. Carefully stir in vanilla (it'll spit), then stir in the baking soda. As you stir, stir, stir to fully incorporate the baking soda, the mixture puffs up a lot (why you use a large saucepan) and becomes lighter in color, kinda like peanut butter. Pour toffee over the munchies and gently fold to distribute and coat as evenly as possible.

    Divide the mixture between your prepared pans and spread evenly. Bake 30 to 55 minutes, stirring every 15 minutes. 30 minutes bake time gives a softer, chewier toffee; 55 minutes for a crisp toffee. You'll notice the toffee liquefies in the oven, making it easier to evenly coat the munchies when you stir.

    Remove from oven and continue stirring and separating the clumps until the mix is cool enough for the pieces to stay separated. Cool completely, then store in airtight containers or zip-top bags.

My 5 siblings and I were raised in the 1950s and 60s midwest by a major foodie dad who was a great cook. We all learned to cook at a young age. I love to cook for my 2 daughters, 7 grandkids, 8 great-grandkids, and extended family. My 4 year old great-grandson makes my day when he says "Nan sure is a good cooker!". :-). I'm trying to get all my favorite recipes saved here so my family and friends all have easy access to them even after I'm gone. My Cookpad collection is their inheritance, so I try to add my comments and memories to each recipe; that way they'll remember me with a smile when they use the recipes years from now. Recently I've called on my grandkids (all adults and avid cooks) to send me their own favorite recipes, with their prep photos, so we can collect everyone's favorites together in one place.
