These are nice as a snack by themselves or to use in other recipes. Oven sun dried tomatoes need to be cooked low and slow so don’t rush or you will burn them.
There is no correct measure of ingredients as you can do it to taste but I’ve listed my preference.

Steps

Cover two oven pans with grease proof baking paper and preheat the oven to 150 degrees Celsius on fan setting.

Cut the tomatoes in half and lay them out evenly across the two pans.

Drizzle olive oil over the top of the tomatoes and add seasoning of choice (I always add salt and depending on what I want to use the tomatoes for I’ll also add garlic granules and smoked paprika).

Place in the oven for 2-3 hours until cooked to your preference. I would suggest checking on them regularly and turning the pans half way through.

Store in an air tight container (I prefer a recycled glass jar).
