Make meringue by whisking half the sugar and egg whites.

In a separate bowl, whisk the egg yolks and remaining sugar until pale.

Add the salad oil little by little while whisking, and once it's mixed well, add the lemon juice and lemon zest.

Mix well, then add rice flour and mix. Add the meringue from earlier and mix.

Fry slowly in a frying pan over low heat.
