200 gleather jacket steak
4thin slices of ginger
2 tbspsChinese cooking wine
3 tbspsmirin
1.5 tbspsshoyu
1/2 cupwater (a small bowl)

Score fish.

Bring all seasonings ingredients to a boil. Then lower to a simmer and add in fish and cook on one side for about 5-8 minutes. Cover or add drop lid.

Baste with liquid and cook for another 4-5 minutes till cooked.
