Karahi Egg Masala

Karahi Egg Masala is a perfect North Indian style egg curry . It is a rich, creamy and delicious egg curry made with cubed and sautéed onion,tomato,capsicum along with few simple ingredients.Serve this delectable egg dish on a special weekend dinner or at parties with tandoori roti, naan, paratha, jeera rice , Basanti Pulao or as a side with hot steamed rice.

Karahi Egg Masala is a perfect North Indian style egg curry . Boil the eggs with 1 tsp salt in 3 cups water for 10 minutes.Peel them and pierce all sides with a fork.Smear salt and 1 pinch turmeric and set aside for 5 minutes.Meanwhile make a paste of cashewnuts, cream, 1 tbsp yogurt and chopped tomato.Heat a skillet with oil and saute the boiled eggs till light golden brown on all sides.Set aside.

In the same oil,add diced onion,capsicum,deseeded and cubed tomato and saute till tender.Drain oil and set the vegetables aside.Add ghee to remaining oil.When the oil is heated,sprinkle cumin seeds and half crushed whole garam masala. Add finely chopped onion and fry till translucent.Add the ground paste, turmeric and Kashmiri Red Chilli Powder,Karahi Masala,kasoori methi and salt to taste.A pinch of sugar maybe added to balace the tartness but optional.

Fry the masala till oil leaves sides.Add the eggs and saute till masala coats them.Add a cup of water and boil till gravy is reduced.Add the sautéed onion,capsicum and tomato. Boil till gravy coats the eggs and vegetables. Sprinkle garam masala and garnish with 2 slit green chillies and chopped coriander.Heat a tsp of ghee in a pan and add 1/4 th tsp Kashmiri Red Chilli Powder. Sprinkle this over the eggs and add few cashewnuts.

Cover and give a standing time of 5 minutes before serving. Remove to a serving bowl and serve Karahi Egg Masala with tandoori roti,naan, pulao or hot steamed rice.
