Chicken over garlic Parmesan spaghetti

Cooking Instructions

Preheat oven to 400 degrees. Line a cookie sheet with foil and lightly spray olive oil. Cut each tomato into 6 pieces. Sprinkle the Tuscan spice, salt and pepper over the tomatoes. Bake for 20-25 minutes at 400 degrees.

Cook spaghetti while these bake. I use my pressure cooker to cook my pasta.
Then you’ll want to cook your chicken. Season chicken with Tuscan spice, salt and pepper.

Heat a pan on the stove top with oil and cook chicken until browned, 5-7 minutes per side.

Melt 1 Tbsp butter, add garlic and remaining Tuscan spice seasoning. (30 seconds to a minute).
Then stir in the cream cheese and half the Parmesan cheese, 2 tbsp butter and 2/3 cup of hot water. Let simmer a few minutes and then turn off heat. Season with salt and pepper.

Mix sauce and spaghetti together, serve chicken over the top, cut breast into slices.

I dislike my chicken parmesan to be served on top of a pool of tomato sauce; the chicken will be soggy and loses it's crunch. Remember, less is always more. I am using the same tomato sauce from my previous grilled pizza recipe. I still have some leftover. Why not make a pasta dish outta it? As for the chicken parmesan, I am sticking with my "chikin katsu sando" recipe. Sorry, my Italian friends, but I find that the recipe I am using is way superior than the traditional one.Many will disagree with me with the amount of sauce used. Let's just say that I am a born rebel and this is just my metaphor of a classic dish. My daughters love this recipe so much that they literally lick their plates clean!
