Banana Almond Cake

My father loved banana cake, so on his memorial day, I always make this cake to honor him. This cake has a gentle sweetness from the bananas and a wonderful almond aroma when baked!

My father loved banana cake, so on his memorial day, I always make this cake to honor him. This cake has a gentle sweetness from the bananas and a wonderful almond aroma when baked!

Slice 3 bananas and arrange them on the bottom of a greased cake pan. Crack the eggs into a bowl and beat well, then add the milk, sugar, and oil or melted butter, mixing until combined. Mash the remaining 2 bananas and add to the mixture. Sift in the flour and tapioca starch, then mix until you have a smooth batter. Toast the almonds until golden.

Stir some of the toasted almonds into the batter. Add the baking powder and vanilla extract, mixing well. Pour the batter slowly over the banana slices in the pan. Arrange another layer of banana slices and almonds on top. Preheat the oven to 360°F (182°C) and bake for 1 hour.

After about 50 minutes, when the top is golden, remove the cake from the oven and brush the top with honey. Return to the oven and bake for another 10 minutes until the honey gives the top a golden finish. Remove the cake from the pan; both sides should be golden brown.
