Mussels, also known as chem chép, are usually only available frozen here. This is a quick and easy snack—just steam them with lemongrass for a delicious treat.

Open the bag of mussels and rinse them thoroughly. Rinse first with rice-washed water if available, then with cold water. Fill a pot with water and add the smashed lemongrass stalks, cut into pieces. Bring to a boil, then add the mussels. Add 2 teaspoons seasoning powder and sugar, stir well, and season to taste. When the mussels open, turn off the heat. Squeeze fresh lemon over the mussels before serving.
