Taiwanese-Style Soy Milk Soup for Breakfast (Xian Dou Jiang)

There's a famous restaurant in Taipei, "Fu Hang Dou Jiang," which is so popular that there's a large line outside of it even in the morning. Their soy milk breakfast is delicious so I wanted to make it at home. I seasoned it with Japanese dashi so that my husband and kids would like it. I also added tofu to make it more filling.

You can also use Weipa instead of shiro-dashi to give it a Chinese flavor...
If you are using thick soy milk, it'll tend to burn in the pot or make a film on the surface easily. It's better to add a little bit of water to thin it out. For 2 servings. Recipe by kiwicafe

Ingredients

2 servings
  1. Xian Dou Jiang
  2. 200 mlSoy milk
  3. 1pack Silken tofu (soft)
  4. 1 tbspShiro-dashi
  5. 1Green onion or scallion
  6. 1Dried krill (or minced ham)

Steps

    Make the xian dou jiang. Add the shiro-dashi and tofu to the soy milk, and simmer. Please be careful not to bring it to a boil.

    When the tofu is heated through, transfer into a bowl. Top with youtiao, dried krill, and green onion, and serve. You can also add ra-yu chili oil and Szechuan pickles.

    To make 'Tian Dou Jiang'(sweet milk soup), pour the soy milk in a cup and microwave for 1.5. minutes at 600 W, then add brown sugar or youtaio.

    I based this recipe on some dou jiang (soy milk soup) that I had at a famous restaurant in Taipei's "Fu Hang Dou Jiang". It was smooth and easy to drink.
