Slice the potatoes into 1/4-inch (5 mm) rounds. Sauté them in an oiled skillet over medium heat, covered, for 15 minutes, stirring occasionally.

Beat the eggs with salt and pepper. Pour the eggs over the potatoes. Cover and cook for 3 minutes.

Crumble the feta cheese over the omelette. Cover and cook for another 2 minutes.
