To begin making the Hakka Noodles, first boil 5-6 cups of water and add Hakka Noodles to the water when water starts boiling.Add 1 tsp salt and 1 tsp oil to the boiling noodles. Cook till al dente. Once cooked,drain water and wash with cold water.Now drizzle 1 tbsp oil over it and toss well.Chop all vegetables as mentioned and assemble all ingredients.

Heat 2 tsp oil in a pan.Beat 2 eggs and add salt and pepper. Pour the whisked eggs and scramble it.Set aside.Heat 2 tbsp oil in a large wok.Add in minced ginger and garlic and saute for a minute.Add sliced onions and saute for 2 minutes. Add in carrot,beans, and capsicum. Stir fry for 2 minutes and add finely chopped cabbage and onion flower stalk.Saute for 2 minutes. Sprinkle salt and black pepper powder.Toss for a minute. Now add the scrambled eggs.

Add Green Chilli Sauce,Dark Soy Sauce, Tomato Sauce, Vinegar and pinch of ajinomoto. Toss to mix well.Add the cooked noodles and toss well with the veggies. Stir fry it for 5 minutes on high flame.Sprinkle few chopped spring onion greens over the noodles and give it a toss.Serve hot immediately for a perfect weeknight dinner.
