Cranberry Blueberry Waffles with Chocolate Sauce
Our brunch during the Week end: Healthy delicious waffle, without white sugar, butter, milk or egg. Flax meal soaked in water is egg substitute. Sweetness comes from nutella, chocolate sauce, berries, maple syrup and coconut milk #OIN #chocolate sauce
Steps
- 1
Make a checklist; keep all ingredients within reach.
Chocolate sauce: - 2
In a small bowl, add 4tbsp water and cacao powder. Mix with a spoon until everything is well combined and a thick chocolate paste forms.
Add the coconut oil and the honey/maple syrup to the mixture and microwave for 30 seconds. Stir to mix. Microwave again for 30 seconds
Stir contents in the bowl until combined. Stir in cinnamon. Chocolate sauce might be thick. Thin it out to the desired consistency by adding about 1 teaspoon of water at the time and mixing well after each addition. - 3
Waffle: Smooth velvety sauce is ready to go into waffle batter. Get waffle ingredients ready.
- 4
Batter: soak flax seeds in 1/4 c water for 15 minutes
Take the wet ingredients- buttermilk, coconut milk, oil, vanilla extract, nutella, chocolate sauce, flax meal and vinegar in a bowl. Whisk to combine.
Keep a sieve over the bow with the wet ingredient; take the dry ingredients, coconut flour, All-purpose flour, baking soda, baking powder, Cinnamon powder and salt. Sift into the bowl in three batches. After adding each batch of dry ingredients, using a spatula mix with the wet mixture. - 5
Mix well with a spatula to prevent lumps. Take cranberries and blue berries in ½ c of flour to coat with flour. Add this and fold into the batter. Do not over mix. If the batter is too thick you may add milk or water little by little to get the right consistency. Rest the batter for 10 to 15 minutes.
Meanwhile turn on the waffle maker. - 6
Follow the instruction in the manual for operating the waffle maker. Grease the inside of waffle maker. Preheat waffle maker, 5 to 10 minutes. With a ladle spread 3/4c of batter. Do not overfill. Close the waffle maker. You will see steam escaping through the waffle maker. Wait for the steam to go away. Do not open the waffle maker while cooking. It may take about 5-8 minutes for the waffle to cook. Keep it closed a little longer if you want the waffle to be crisp.
- 7
Turn off the waffle maker. Using a spatula, lift carefully and place the waffle on a plate. Spread honey or maple syrup. You may decorate with berries in the pockets. Sprinkle chopped nuts of your choice. I used almond, walnuts and cashews.
You may serve with whipped cream on the top. Your loved ones would love the healthy delicious cranberry blueberry waffle, You may serve with ice cream, chocolate coffee or chocolate tea. - 8
Tip
You can top frozen or fresh berries in a bowl with the chocolate sauce. It tastes simply delicious
