Very popular fingerfood sausage in Europe, shaped like a hot dog, poached first so it doesnt need a casing, and then deepfried. Dipped in mayo or ketchup or a mix of both, eaten warm. They freeze and reheat well. Hotdogs are made ten to a pound. This recipe makes over 2 lbs., enough for 20 sausages, but my frikandels are bigger, ice cream scoop size, I make a dozen or so sausages.

Ingredients

Prep 1/2 hour, poach 15 min, deepfry 2 min
2 people, dozen sausages
  • 1/2 poundpure pork fat or bacon, unrendered, cut in strips
  • 1 poundlean pork shoulder meat, cut in strips
  • 2 cupsfrying oil, to be filtered and reused
  • 1/2red Onion, cut in strips
  • 1/2thumbnail Ginger, cut in strips
  • 1/2 cupBreadcrumbs
  • 1/2 cupdairy cream
  • 3 clovesgarlic, peeled
  • 1/2Nutmeg, rasped
  • 1/2 TspCoriander
  • PinchSalt
  • PinchPepper
  • Serve with fresh mayonnaise

  • Serve with fresh Ketchup
  • Equipment: sausage grinder, glass bowl, ice cream scoop, 9” cast iron pan with lid, 9” cast iron skillet, strainer, thermometer, plastic wrap. Stainless steel funnel with mesh filter to reuse oil
  • Cost: $3 for 12 sausages, 25 cents a piece

Steps

Prep 1/2 hour, poach 15 min, deepfry 2 min
  1. 1

    Cut unrendered cold pork fat and cold lean pork meat in strips and run through the sausage maker with garlic, onion, ginger and spices. Put in glass bowl.

    Put in glass bowl, handmix with heavy cream, mix in bread crumbs till firm. Rest to let flavors mingle. Make 12 to 14 ice cream scoop size balls. Roll each ground frikandel sausage stuffing ball out to hot dog size in plastic wrap, twirl ends closed.

    Boil water in pan, turn off, put wrapped sausages in, poach fifteen minutes. Pour off hot water, fill with cold water till sausages have solidified. Lift out to unwrap, dry.

    In cast iron skillet, heat 2 cups of oil, 1/2” of oil in the skillet, to 350F degrees, turn heat down, float sausages in the hot oil till dark brown, with a crispy crust, about two minutes. Serve warm. Shrinkwrap leftover sausages if freezing. Filter and reuse warm oil for future pork flavored oil use.
