Jowar-Bajri Thalipeeth

Jowar (white millet or sorghum) improves digestion and boosts immunity. Bajri (pearl millet) is rich in potassium which helps people with high blood sugar levels. Wheat flour is a good source of weight management and provides energy. And besan (chickpea flour) is also a nutritious ingredient that is high in protein and fiber.
This thalipeeth is considered healthy as it consists of several flours like wheat, Bajri, sorghum, gram flour and vegetables like cabbage, carrot, onion, green chillies, chopped coriander leaves.

Steps

Combine all the flour in a large round plate or deep bowl.

Add grated cabbage, grated carrot, finely chopped onion, crushed green chillies, dhania-jeera powder, chopped coriander leaves, red chilli powder and salt. Mix well.

Knead the mixture into a soft dough using enough water as required. Add 1 tsp oil and knead dough. Cover the dough and keep aside for 10-15 mins.

After 10 minutes knead the dough again so that it is smooth but not too soft or too hard. Divide the dough into equal sized balls, flatten the balls.

Now take a ball of dough, spread some wheat flour on the rolling surface and dough ball. With the help of a rolling pin, roll into a circle like slightly thick poli/chapati.

Heat a nonstick Tawa on medium heat. Grease tawa well with a little oil. Carefully place the thalipeeth on tawa. Put oil around the sides. Cook on both sides of Thalipeeth until golden brown spots appear.

Apply few drops of oil on the Thalipeeth. When both sides are cooked well, remove it from tawa. Similarly prepare all Thalipeeth.

Serve hot immediately with curd.

Notes :-
Since the dough is soft, it is difficult for beginners to roll dough with dry flour. So you can make this thalipeeth with the help of plastic sheet or butter paper. Place dough ball on greased butter paper on rolling board. - 10
With your greased fingers gently flatten and start patting and spread the dough into an even circular disc. Make 3-4 small holes which will help the thalipeeth to cook evenly.
