Negi-Meshi (Rice with Leeks) from a Ramen Noodle Bar

I really love the delicious negi-meshi that I ate at a ramen place called "Rasuta" in Yokohama. Because it would be difficult to make a perfect recreation, I made this recipe hoping it would be something similar. Of course, this is nothing compared to the real thing, but it's still delicious and satisfying for my husband.

I think it's better to soak the leek and scallion in water if you have small children.
I've only eye balled the amount of condiments, so refer to them merely as an example. I usually make it quite strong to adjust the amount when pouring over rice. For 2 servings. Recipe by Natsupopo

Ingredients

2 servings
  1. 1/2Japanese leek (the white part)
  2. 1/3 bunchGreen scallions
  3. 1 tsp★Weipa
  4. 1 tsp★Shio-koji (salt fermented rice malt)
  5. 1 tsp★Sake, mirin
  6. 1 tbspSesame oil
  7. 1Toasted sesame seeds
  8. 1Pepper

Steps

  1. 1

    Chop the leek and scallion into small rounds. If you'd like, soak in water to remove the spiciness.

  2. 2

    Mix all ★ condiments and microwave. 10 to 20 seconds is fine, since it's only to evaporate the alcohol.

  3. 3

    Mix the condiments from step 2. Add sesame oil.

  4. 4

    Scoop rice into a rice bowl. Top with pepper that is coarsely ground, the condiments from step 3, leek, and scallions. Sprinkle toasted sesame seeds and serve.
