Savory side dish that’s quick, easy, inexpensive, and full of flavor!

Ingredients

4-6 servings
  1. 2 headscollard greens, cleaned and roughly chopped
  2. 2 cansbeans, drained and rinsed (I used cannellini and navy)
  3. Handfulgarlic cloves (8-10) chopped (I go heavy on garlic so use your judgement)
  4. 1medium yellow onion chopped
  5. 1/2lemon juiced
  6. 1/2-1 cupgrated Parmesan cheese
  7. Red pepper flakes to taste
  8. Salt to taste
  9. Olive oil to coat pan

Cooking Instructions

    In a large skillet, heat olive oil over medium-high heat. Sauté garlic and onion until translucent.

    Add collard greens to skillet, folding in to mix with garlic and onion.

  3. 3

    Add lemon juice, crushed red pepper, and salt.

  4. 4

    Once greens are limp but still bright in color, add beans and lower heat to medium-low. Continue cooking for another 5 minutes until beans are warm.

    Add Parmesan cheese and mix in.

  6. 6
