Beef and Greens

Not difficult, great flavor, pretty quick.
Found some Rapini at the store, not something I see around here, so I bought a bunch. Any greens should work with this, collard, mustard, etc. Found a few recipes I sort of combined and modified to come up with this one. And it is very good. I suggest you serve over rice, but other ways would work, noodles, mashed potatoes even polenta.

Ingredients

20 minutes
3-5 servings
  • Meat & marinade
  • 1 poundground beef
  • 1 teaspoonsoy sauce
  • 1 teaspooncooking wine
  • 2 teaspoonoil
  • 1/2 teaspoonkosher salt
  • 1/2 teaspoonsweet (I used honey, but sugar is fine)
  • 1ground black pepper to taste
  • Sauce
  • 3 teaspoonscooking wine
  • 2 teaspoonssesame oil
  • 3 teaspoonsOyster sauce
  • 2 teaspoonssoy sauce
  • 1 teaspooncorn starch
  • 1/2 teaspoonsweet (I used honey)
  • 1 tablespoonhot sauce (optional)
  • Stir_Fry
  • 1 bunchgreens, about 3/4 pound (I used Rapini, any should work)
  • 6 clovesgarlic
  • 1/2medium onion
  • oil for cooking

Steps

20 minutes
  1. 1

    If you are going to eat this with something, like rice, start it at an appropriate time so it is ready at the same time.

    Mix meat and marinade, set aside

    Mix sauce ingredients, set aside

    Clean greens,.

    Cut into about 1 inch lengths, separate leaves from stems

    Dice onion, I'm using a spring onion because I had some on hand

    Into a skillet, wok or stir-fry pan, put about a tablespoon of oil, medium high heat. Put meat in, cook it until just done. Take it out, set aside.

    Put pan back on heat, add more oil, put garlic and onion in. Stir fry 1 minute.

    Add stems from greens.

    Stir fry about 2 minutes until the stems are bright green, time depends on thickness of stems.

    Add the leaves

    Stir fry until wilted and cooked down

    Add meat back in

    Stir fry for 2 minutes, just to heat it through

    Add sauce to center of pan

    Stir fry 2 more minutes to heat and thicken sauce.

    Add some rice into a bowl

    Put beef & greens on top to serve

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
