This recipe can be made with white spelt flour or einkorn flour

Put the flour, butter, baking powder, orange zest and salt in a food processor and pulse until the mixture resembles coarse meal.

Add the eggs, maple syrup and vanilla and give a quick mix until the mixture is combined (Don’t over mix).

Pour the cake mixture into a buttered loaf pan (I used a 23x10.5x6.5 cm loaf pan). Bake at 350°F for 45 minutes.
