  • 1whole cauliflower
  • 1onion
  • Fleur de sel, to taste
  • Pepper, to taste
  • 2 tablespoonscanola oil (30 ml)
  • 1 teaspoonsoy cream per bowl (5 ml)

Steps

    Cut and wash the cauliflower. Set aside 4 small florets for garnish. Keep the clean leaves and core; we’ll cook everything to avoid waste.

    In canola oil, sauté the sliced onion. Add the cauliflower, leaves, and core. Stir and let cook. Season with salt and pepper.

    Add enough water to cover the vegetables, cover, and cook until tender.

    Blend until smooth.

    Serve in a bowl, add the reserved florets for garnish, and top with 1 teaspoon of soy cream.
