I learned this recipe from my mother-in-law, and it's one of my husband's favorites, which is why I learned to make it. It's delicious served with avocado and sautéed onions.

Cook the textured soy protein in water, then drain it when done.

Brown the chorizo and bacon well in a skillet.

While they brown, cook the guajillo chili pepper.

For the sauce, blend the guajillo chili pepper with salt, water, cumin, allspice, and cloves (all to taste, not too much or too little).

Add the cooked soy protein to the chorizo and bacon, mix well, and pour in the blended sauce.

Let it cook a little longer. Serve with salsa, cilantro, sautéed onions, and avocado.
