Grill the polenta slices using whatever you have at home—oven, grill pan, grill, or skillet—until they are nicely toasted and crispy. Here are 3 topping ideas, but you can use leftovers or get creative with your own combinations.

For the first, spread creamy cheese on the base, top with caramelized cherry tomatoes, and drizzle with a little olive oil.
