Take a big eggplant,cut into pieces,put it in water.

Cut onion, tomato, green chillies and curry leaves.keep aside.

Keep a pan, add oil,keep it on medium flame, add mustard seeds,curry leaves,onion saute for two minutes,then add tomato pieces,mix well till it turns juicy. Then add brinjal pieces, mix well.

Ten add given masala powders, give a nice mix. Add require amount of salt and coconut pieces,saute for few minutes.

Then sprinkle some milk, close with lid.Allow to cook for five minutes. Milks give nice taste and aroma.

Remove the lid and mix well for few seconds. Super tasty eggplant subji is ready.

Transfer to a serving bowl. This subji goes very well with paruppu sadam and other variety rice.
