Ingredients

  • Dough
  • 800 grflour
  • 2eggs
  • 150 mlwater
  • Salt to taste
  • Filling
  • 500 grground meat (half beef, half pork)
  • 1 clovegarlic, chopped
  • 1onion finely chopped
  • Coriander finely chopped
  • Salt or svanuri marili
  • 1 tbspred chili pepper flakes
  • 1 tbspfreshly ground caraway
  • 1 cupwater

Steps

  1. 1

    For the dough: Add the eggs and salt to the flour and mix. Start kneading and add water as needed to create a firm dough. Knead for 15 minutes, let it rest for 30 minutes and then knead again.

  2. 2

    For the filling: mix all the filling ingredients and start adding water until you have a semi runny mix.

  3. 3

    Portion the dough, roll each portion in circular shape, fill it and close it to form the khinkali, ideally with 19 folds.
