For the dough: Add the eggs and salt to the flour and mix. Start kneading and add water as needed to create a firm dough. Knead for 15 minutes, let it rest for 30 minutes and then knead again.

For the filling: mix all the filling ingredients and start adding water until you have a semi runny mix.

Portion the dough, roll each portion in circular shape, fill it and close it to form the khinkali, ideally with 19 folds.
