In a pan add oil, when heated, add cumin seeds when starts to crackle, add finely chopped onions 🧅, cook till transparent, add half chopped leek and mix well, ginger garlic paste 🧄 mix well, cook for 1 min, add finely chopped tomato 🍅 mix well.

When tomato 🍅 is soft, add tomato paste, mix well cook for few sec and add salt 🧂, kashmiri chilli powder, turmeric powder, coriander cumin powder,green chillies paste and mix well, cook for 1 min on medium heat, add carrot cubes 🥕and mix well, cook for 3 mins, add potato cubes, peas 🥔 and mix well, cook for 3 mins with the masala.

Add little water 💧, add garam masala powder mix well,cover and cook, when potato and carrots 🥕 are tender, soft, remove from the heat, add remaining chopped leek 🌿 and mix well, serve hot with indian flat bread, naan, plain rice 🍚.

Note: you can use as filling for veggies sandwich 🥪, if desired.
