Add the cooked rice to the pot with the leftover curry. To prevent sticking, add a little water and mix well.

Once combined, heat over low heat, stirring to avoid burning. If you added too much water, cook a bit longer to let the excess moisture evaporate.

Crack the egg into a bowl. Add the milk, salt, and pepper, and beat together with chopsticks or a fork.

Heat a small frying pan (about 8 inches/20 cm). Pour in the egg mixture and gently stir the center. When the egg is half-cooked, place the curry rice from step 2 in the center, fold the egg over the rice, and transfer to a plate.
