I used whatever I had in the fridge to make these muffins. When you are caring for sick kids all week, can't get to the grocery, but want to make a hot dish for your MOPS mamas, sometimes you have to improvise! Basically, you can use whatever ingredients want to make them your own!

I used whatever I had in the fridge to make these muffins. When you are caring for sick kids all week, can't get to the grocery, but want to make a hot dish for your MOPS mamas, sometimes you have to improvise! Basically, you can use whatever ingredients want to make them your own!

Preheat oven to 325 degrees.

Whip eggs, milk and salt for 1 minute.

Stir in spinach and tomatoes to mixture.

Spray a 24 muffin pan (or a 12 muffin pan) with cooking spray. Pour egg mixture into pan. Sprinkle with cheese.

Bake for 20 minutes until muffins are slightly rising, are firm to the touch, and lightly golden. Remove from pan when cool.
