Do you have leftover mochi or kirimochi from New Year's? This fusion of Japanese and Western cuisine will warm you up on a cold night! A great way to use up mochi!
The origin of this recipe
I came up with it on a whim.
Cooking Instructions
- 1
Thinly slice the onion against the grain as shown in the image. Mince the garlic.
- 2
Melt the butter in a thick pot and sauté the onion and garlic over medium heat. (A thick pot is less likely to fail. Once you're used to it, a regular pot will work too.)
- 3
Once the onion is tender, reduce the heat to low.
- 4
Sauté slowly and thoroughly.
- 5
I sauté until this point, but you can stop a little earlier if you prefer.
- 6
Add the white wine and scrape off the brown bits from the pot.
- 7
Add the water and bouillon cube.
- 8
Simmer and adjust the taste with salt and pepper.
- 9
Cut the mochi in half. It won't fit in the bowl otherwise. Grill or fry until golden brown.
- 10
Like this!
- 11
Add the soup and mochi to a bowl...
- 12
Top with cheese. Of course, lots of cheese is delicious! Bake in the oven until the cheese melts.
- 13
Bake until it looks like this!
- 14
Sprinkle with dried parsley to finish!
- 15
The mochi and cheese stretch beautifully!
