I discovered Chinese soup base (Weipa) two years ago. At first, I tried making soup with it and thought, "Wow—this tastes just like ramen!" Since then, I've been hooked on making ramen at home. I used to spend a lot of time making chashu pork, but when I went to Tokushima, I was surprised! Instead of chashu, they top the ramen with sweet and savory simmered thinly sliced pork belly! And it's delicious! I just had to try making it myself.

First, go to the store and buy some Chinese soup base (Weipa or similar).

Bring 4 cups (1 liter) of water to a boil in a pot, then add the ingredients marked with ★ to make the broth. (Check the can for exact measurements if needed.)

Meanwhile, heat sesame oil in a frying pan and quickly stir-fry the bean sprouts. Season with salt and pepper.

Rinse the frying pan, then heat vegetable oil and stir-fry the thinly sliced pork belly. Once the meat changes color, add the ingredients marked with ☆ one at a time.

Cook the noodles according to the package instructions.

To serve, add the broth and noodles to a bowl, then top with the bean sprouts, sweet and savory pork belly, and green onions. If you like, add a soft-boiled egg.
