Ingredients

  1. 5.3–7 oz edamame (fresh or boiled, both are fine) (150–200 grams)
  2. 1/2onion (sliced)
  3. 1/2 cupwater (100 ml)
  4. 3/4 cupmilk (200 ml)
  5. 1/2bouillon cube
  6. 1 pinchsalt
  7. Black pepper to taste

Steps

  1. 1

    Remove the edamame beans from the pods and peel off the thin, clear skins.

    If using fresh edamame and it's hard to remove the beans, microwave them at 600W for 1 to 1 1/2 minutes to make it easier.

    Slice the onion.

  4. 4

    Add the water, bouillon, onion, and edamame to a pot. Cover and simmer over medium-low heat for 10–15 minutes.

    If using fresh edamame, set aside a few beans for garnish partway through this step. If using boiled edamame, set aside a few at the beginning.

    When the onion turns translucent, add the milk. Warm gently without letting it boil, and season with salt and pepper to taste.

    Blend the mixture in a blender until smooth.

    Garnish with the reserved edamame and sprinkle with black pepper if desired. Enjoy hot or chilled from the refrigerator.
