I've been trying to think up some rice & bean bowls. This bowl is inspired by Amy's frozen dinner. I kicked it up, though, by adding rice and vegetable.

I've been trying to think up some rice & bean bowls. This bowl is inspired by Amy's frozen dinner. I kicked it up, though, by adding rice and vegetable.

Ingredients

  1. 2 cupCooked Rice
  2. 2 cupSliced Vegetable (i.e. Zucchini, Spinach, Squash)
  3. 1 canBlack Beans
  4. 1/2 tspCumin, Onion Powder, Cayenne, Pepper
  5. 1/2 cupCilantro
  6. 1Tortilla Chips
  7. 1/2 cupEnchilada Sauce
  8. 1 cupCheddar Cheese
  9. 1/2 cupGuacamole

Cooking Instructions

  1. 1

    Place beans in a pot with a 1/4 cup water and all seasonings. Stir and simmer for 5 minutes until softer.

    Divide rice in two bowls.

    Optional: To make a more complete meal you can add a vegetable. I added chopped spinach and placed it between the rice and beans.

    Top with beans and cilantro

  5. 5

    Top with tortilla chips. Drizzle on sauce. Top with cheese.

    Heat in microwave for 1 1/2 minutes.

    Put a dollop of guacamole on top.

    Option: Add a dollop of sour cream

I'm a vegetarian cook. I love to incorporate beans, grains, vegetables, fruit and herbs in my cooking. In trying to be more healthy I also don't use oil or butter to cook and bake with.My recipes are geared to taste great, uses real ingredients that you can get at the grocery store or Sprouts (health food store) and the whole family will love. My family are meat eaters and they eat everything I cook.Enjoy!!
