Coffee, chocolate chip cake

I was in the mood to experiment and I enjoy coffee flavour. It turned out really well. The chocolate chips can be quite sweet, so I may cut the sugar down to one cup next time. I hope your family enjoys this cake as much as my husband did 😊

I was in the mood to experiment and I enjoy coffee flavour. It turned out really well. The chocolate chips can be quite sweet, so I may cut the sugar down to one cup next time. I hope your family enjoys this cake as much as my husband did 😊

Spray two baking pans with non-stick spray and dust with flour

Switch oven on to 180 degrees Celsius

Sift flour and baking powder and add dry coffee granules to the flour mixture

With the paddle attachment cream the butter and sugar well, scraping down the sides as necessary

Add eggs one by one blending well in between

Add vanilla, blend well

Add sifted flour mixture alternating with milk. Mix very well each time flour or milk is added

Distribute between the two pans evenly and tap pans lightly on the counter

For 20-25 minutes. Check with cake skewer after 20 minutes, if it comes out dry, the cake is done

Allow to cool in pans for 10 minutes the turn out onto cooling rack

Top with your choice of icing. I like to use icing sugar and ideal milk, but this time I used icing sugar, vanilla essence and fresh cream. It does whip up nicely on high speed. Grate chocolate over the top
