About this recipe:
This morning, my 'Scoop Croquettes' were featured in Cookpad News♡
And since I happened to have leftover nikujaga from yesterday, I created a new scoop croquette recipe right away.
I used to call them 'Sukokoro,' but from today, I’ll call them 'Sukkoro' because it sounds cuter (lol)♡

Ingredients

As much leftover nikujaga as you have
as neededShredded melting cheese,
For every 3.5 oz (100 g) of well-drained nikujaga: 1/2 teaspoon curry powder
Black pepper to taste (for adjusting spiciness, optional)
as neededPanko breadcrumbs,
as neededOlive oil,

Steps

Start with leftover nikujaga from yesterday. Use it cold, straight from the fridge!

Line a strainer with paper towels and add the nikujaga. Let it sit for a while to drain off excess liquid. Meanwhile...

To toast the panko:
Toast the panko to make it crispy and golden brown.

Put the panko in the baking dish you’ll use. Transfer to a skillet, turn on the heat, and shake or stir until the panko is golden brown.

Lightly mash the nikujaga, then mix in the curry powder and black pepper.

Cover with plastic wrap and microwave until heated through.

Transfer to a baking dish, top with cheese, sprinkle with toasted panko, and drizzle with olive oil.
*Today I made it without oil.

Bake in a toaster oven or regular oven until the top is lightly browned. (For reference: in my home, a single serving took 5 minutes in the toaster oven.)
